But the truth is, many salads are just the opposite of healthy. Let's consider my three favorites:
Southwest Chicken Caesar | Paradise Bakery
I eat this one for dinner almost every Tuesday. Really it's more like chicken nachos with a side of lettuce. It includes chicken, those little tortilla strips, cheese, and dressing with a little kick. Oh yeah, on a bed of lettuce.
Champps Americana Chopped Salad | Champps
... and by "Americana," they mean bacon and candied pecans. But on the bright side, it contains apples and dried cranberries.
Chicken Cantonese | When Eddie Met Salad
This may be the healthiest of the three. It does have carrots, oranges and almonds on it, after all. But the sauce the chicken is cooked in probably isn't so great. And I'm sure that mandarin ginger dressing can't be good, either.
At least cookies don't try to be something they aren't.

Salad here is probably a bit healthier, though you might walk away with some nice gastroenteritis and a new parasite attempting to eat something that hasn't been thoroughly boiled and cooked.
Wow...the blue cheese Paradise salad sounds yummy to me right now. Only 3 weeks before that goodness becomes reality. In the meantime, it's a lot of rice, beans/lentils, and stews for me. Fries ("chips") actually are pretty common here in town too...except they have not mastered our ketchup recipe. :)
My conclusion to the salad post: eat some raw veggies before going to Paradise and then enjoy some cookies w/o any guilt.
seriously- check out the nutritional info of the chicken ceasar salad from the costco snack bar. it is ridiculous...
Here's one for you to try;
4 Cups Swiss Chard Leaves
4 Cups mesclun?salad greens
2 Tbsp. toasted sliced almonds
1 small red onion, sliced
1 cup fresh rasberries
1 cup sliced mushrooms
Combine all.
Dressing:
1/2 cup fresh rasberries
1/3 cup orange juice
1 tsp almond or hazelnut oil
1 Tbsp sugar
Place dressing ingredients ina blender and blend until smooth. Drizzle over sald and toss.
Serves 4
